This almond butter balsamic vinaigrette is seriously such a delicious dressing/ sauce which can be used in various different dishes. Think salads, rice paper rolls, on wraps, nourish bowls…
so simple, so tasty, simply a must try Xx
Dressing: 2 tbsp almond butte ( thick - homemade ), 2 tbsp balsamic vinegar, water to thin
Add almond butter and balsamic to jar. Add water to meet your desired thickness. Shake ingredients until thoroughly mixed.
Bowl instructions (4-5 servings)
Prepare either 1 cup of brown rice or quinoa according to package instructions
Chopped 5 cup veg of choice - zucchini, capsicum, broccoli.
Coat veg in olive oil and paprika, salt and pepper and chilli powder
Pop in oven at 210C and bake for 20 mins
Dice ~600g chicken thigh, coat in spices and olive oil
Place chicken on same tray as veg, mix and place back in oven to bake for ~15-20 mins
Serve up the brown rice, roasted veg and chicken in a bowl and smother in the almond balsamic vinaigrette
