Pumpkin Chicken MEATBALL CURRY

Who doesn’t love a creamy curry. The gorgeously aromatic curry pairs perfectly with the juicy meatballs. Enjoy darlings


Recipe for 4:

MEATBALLS

500 g chicken mince

1/3-1/2 cup of oat flour

1 tsp of chili paste

1 tsp of curry powder

1/2 tbsp of freshly minced garlic

Fresh pepper


SAUCE

Olive oil

1 large red bell pepper

1 large carrot

1 tsp chili powder

1/2 tsp of turmeric

2 tbsp of curry powder

1/2 cup of pumpkin puree

1 can on coconut milk

1 tbsp of soy sauce

1/2 tbsp of minced ginger

Splash of water

Handful of spinach


Method:

1. Mix all the ingredients for the meatballs together in a bowl and roll into ~20 meatballs. Cook in a little olive oil in a pan over medium heat

2. Chop your veg and sautee in olive oil for ~5 mins

3. Add the spice to the veg, then the pumpkin*, coconut milk and soy sauce. Bring the mixture to a slow simmer for at least 10 mins to allow flavor to brew.

4. Add the meatballs to the pan and cook for another 5 mins.

5. Serve the curry with basmati rice


*pumpkin puree was made by pureeing steamed pumpkin.
