If you’re in need of some meal prep / salad inspiration you MUST give this dressing a shot. This sauce can also be used a dip for fresh veggies and crackers! The creaminess of the feta is chiefs kiss delish :)

Capsicum & Feta Dressing:
1 large roasted red capsicum
90g of feta
1/3 cup of greek yogurt
2 cloves of minced garlic
2 tsp of nutritional yeast
Red chilli flakes
s&p
Simply blend all the ingredients together and pour over your salad of choice. In my salad I used brown rice, prepped garlic chicken thighs, diced cucumber and sliced cherry tomatoes.
