Ingredients
1 egg
1/4 block of firm tofu pressed and chopped into bite sized chunks
1 tsp of sesame seed oil
2 cloves of garlic minced
1 inch of ginger grated/ finely chopped
1 tsp of chili garlic sauce
2 cups of veggie broth
1 tbsp of soy sauce
4 shiitake mushrooms sliced
2 ounce of rice noodles / ramen noodles
1 tbsp of miso
green onions - optional
sesame seeds - optional
Method:
Add water to a medium to and bring to a boil. Once boiling add your egg gently and boil for 6 minutes. After your egg has boiled transfer it to an ice bath of cold water
Whilst the egg is boiling in another pot add some sesame seed oil, and pan fry the tofu until crispy. Remove the tofu and add the garlic and ginger, cook for 3 minutes
Then add your veggie stock, garlic chili sauce, soy sauce, mushrooms and bring to a slight simmer
In the same pot you used for the egg add your noodles and cook according to package instructions
Remove your broth from the heat and add your miso, mix until even dispersed
Take egg out of the ice bath, remove the shell and cut down the middle
Add your noodles to your bowl and pour the broth and mushrooms over the noodles, add your egg and sprinkle some green onions and sesame seeds over the top
