CREAMY AVO PASTA SALAD

yum yum yum :) what a perfect meal for my school lunches this past week. Meal prep can be hard because I usually get sick of eating the same meal over and over. But this avocado pasta salad had me looking forward to munching down my lunch everyday.


This pasta is so customizable and doesn't need to be reheated so it is perfect to bring along to school with you.



I used chicken breast as my protein source but that can easily be subbed for chickpeas of white beans for any of my vegans/ vegetarians :) I used rotini pasta as it holds onto the sauce mmmmmm. This meal made 4 portions for me.


Ingredients


  • roughly 16 ounces of cooked chicken to your liking*

  • 4 servings of pasta cooked and cooled, I opted for rotini

  • 1 cucumber sliced and diced

  • 1/2 a container of cherry tomatoes (6 ounces, 250g)

  • 1 finely diced jalapeño (optional)

  • 1/2 a jar of roasted bell peppers

  • pickled red onions

  • sun-dried tomatoes

SAUCE

  • 1/2 cup of greek yogurt/ plain dairy free yogurt

  • 1 avocado

  • juice and zest of 1 lemon

  • pepper to taste


Method

  1. Prepare your chicken, pasta, and allow to cool

  2. Chop up all your veg and additional ingredients

  3. Using a blender to combine the sauce ingredients

  4. Mix together the chicken, pasta, and veggies and then toss in the fresh avocado sauce

  5. Top with some extra green onions before eating and enjoy :)


* the chicken can be substituted for a can of WELL washed chickpeas/ white beans
