If you know me, you know I'm ALWAYS strapped with a nourish bowl for school lunch. A good sauce will have you reaching for your lunch before you're even hungry. I never get sick of tasty bowls like these, 4 days of meal prep and I'm still not sick of combos.
COMPONENTS OF MY BOWL:
- Grain: Israeli cous-cous simmered in garlic, s&p, and dried oregano
- Baked eggplant and Zucchini
- Grilled chicken
- Glowing green parsley sauce
SAUCE:
- 1/2 a large bunch of fresh parsley
- 1/4 cup of tahini
- 1 medium jalapeño deseeded (vary the amount depending on how much heat you like)
- Juice of a medium lemon
- pepper
- water to thin (vary to your liking)
