Gonchujang roasted veg Pasta

rich, delicious and so very comforting. Gonchujang is a spice paste formed using red chilli peppers, fermented soya beans, rice, and salt. The flavour of spice, sweet and salty is elite. Combining gonchujang chilli paste with roasted veg forms a rich delicious pasta sauce.



Ingredients (for 2):

1 tbsp of olive oil

1 roasted bell pepper / capsicum

1/2 red onion

1 medium carrot

1 tbsp gonchujang paste

1 tbsp rice wine vinegar

1/4 cup almond milk (any milk of choice)

1/4 cup of veggie stock

pasta & additional veg (optional)


Method:

  1. Roughly chop your capsicum, red onion & carrot in olive oil and bake at 200 C / 400 F until golden roasted (~30ish mins)

  2. In a blender add your roasted veg, gonjuchang paste, rice wine vinegar almond milk, veggie stock and blend until you reach your desired consistency

  3. Serve up with pasta :) I used protein pasta for this recipe
