When you’re lacking motivation in the kitchen or have no idea what sound good for lunch you need a few staple recipes...this salad is one of those for me :)
here’s my take on a simple caesar salad dressing you can make right from home. Not only is the dressing creamy and packed with flavor but it is also secretly healthier than your typical caesar dressing you’d buy from the store.
Dressing ( 1 serving ):
2 tbsp of greek yogurt
1 tbsp of fresh lemon juice
1 clove of minced garlic
1 tsp of parmesan
1/2 tsp of Dijon mustard
Freshly cracked pepper
Salad components:
Crispy fresh lettuce
Grilled Mediterranean chicken thighs
Fresh cherry tomatoes, cucumber & red onion
Greek yogurt Caesar dressing
