when I figured out how easy it is to make ramen at home there was no turning back. This miso & gochugang broth is packed with flavor and doesn't sit heavy in your belly. It has no doubt become a staple dinner recipe for me.
Seriously the perfect winter dish to be served and shared with your loved ones. Have a girls night and 'build a bowl' by choosing all your own fun toppings. Trust me they will like this one.
spicy Ramen broth (1 serv) :
- 1 tsp olive oil
- 1 minced garlic clove
- 1 spring onion
- 2 large shiitake mushrooms
- 1 tbsp miso
- 1/2 tsp gonchujang
- 1 tsp sriracha or other chilli sauce (optional)
- 1 tsp soy sauce
- 1 tsp rice vinegar
- 1.5 cups of veggie/chicken stock
METHOD:
1. To make the broth start by warming a medium pot to a medium heat
2. Add the mushrooms, garlic and string onion, stir and cook for 3-5 minutes until fragrant
3. Add the miso, sriracha, soy sauce, rice wine vinegar. Mix together and cook for ~1 minute before adding the broth.
4. Mix and bring to a boil for a minute and then reduce to a simmer for at least 10 minutes.
5. Serve the broth with your fav noodles, a protein of choice (chicken or tofu are my favs), some veg and a soft boiled egg.
