A comforting & healthy dinner idea :) A perf option for a family dinner or meal prep. Risotto is also an awesome meal you can keep stored away in your freezer for when life gets a lil hectic.
The recipe I have below serves for 2, but can easily be doubled! I hope you enjoy Xx
Ingredients:
1 tbsp of oil olive
2 cups of zucchini
1 cup of Swiss mushrooms
1 cup of dried Arborio Rice
1 & 3/4 cup of veggie/ chicken broth
1 tsp of fresh lemon zest
2 tbsp of fresh lemon juice
1 tbsp Lemon pepper
Parmesan
Grilled lemon pepper chicken
1. To a medium pot add the olive oil and sauté the veg on medium heat for 5 minutes (doesn't need to be fully cooked)
2. Add the rice & a pinch of salt to the pot, stir to coat the rice in olive oil.
3. Raise the heat to medium and add the lemon zest, lemon pepper, lemon zest and 1/2 cup of the veggie broth to the pot. Bring the mixture to a light simmer and stir gently until the broth has simmered down. When the liquid is absorbed add another1/2 cup of the broth. Continue to do this until the risotto has cooked
4. Stir in some parmesan
5. Serve with extra cheese, pepper and grilled lemon pepper chicken
