Filled with ground beef, cheese goodness, hidden veggies and loaded with Mexican flavors. Seriously so easy to make, it will become a staple.
This fire dinner that also works incredibly as a meal prep. So easy to portion up and store in your freezer for days when everything just seems a little too hectic. Also a great way to ensure you’re getting enough iron in!
Ingredients (for 4):
1 cup of dried white rice
1 tbsp of olive oil
1 zucchini
1 can of chopped tomatoes (400g)
1 can of corn (420g)
500g of lean beef mince
1 packet of tomato sauce (50g)
1 cup of tomato sauce
Spices: 1 tbsp of chili powder, 1.5 tbsp of cumin, 1/2 tsp of dried oregano, 1 tsp of paprika, 1/2 tsp of pepper. 1/2 tsp of salt
Shredded cheese and green onions to top
1. Prepare your rice by bring 1 cup of dried rice and 1.5 cups of water to a boil and then reduce to a simmer until cooked
2. In the mean time sauté your zucchini, corn and tomatoes in 1 tbsp of olive oil. Add the tomato paste, and spices. Then stir, cover and cook for 10 mins
3. Add the mince and tomato sauce, stir and cook until cooked through
4. In a large oven safe dish add your cooked white rice. Pour the mince mixture over the rice
5. Top with cheese and green onions, bake for 10 mins at 200C to allow the cheese to melt
6. Top with some sour cream/ greek yogurt, hot sauce of choice and fresh green onions
