FISH TACOS will forever be a fav of mine :) These tacos were extremely flavorful and satisfying and had reaching for more. The fresh lemon dressing pairs perfectly with the light fish.
MAHI MAHI:
1/2 lb of mahi mahi (defrosted if frozen) chopped into bite sized chunks
1 tsp of chili powder
1/2 tsp of cumin
1/2 tsp of paprika
1/2 tsp of garlic powder
1/4 tsp of salt
1 tbsp of olive oil
1 tbsp of lemon juice
Zest of 1/2 a lemon
CREAMY LEMON DRESSING: 2 tbsp of lemon
a lil lemon zest
3 tbsp of greek yogurt
1 garlic clove minced
s&p to your liking
OTHER COMPONENTS:
wraps/ tortillas
cucumber
lettuce
cilantro
hot sauce
Method: 1. add all the "MAHI MAHI" ingredients into a bowl and allow the fish to marinade for at least 15 minutes (I did 20 minutes)
2. whilst your fish is marinading prepare your dressing by mixing together all the "CREAMY LEMON DRESSING" ingredients into a small bowl/ glass. Also prepare your cucumber, lettuce and cilantro
3. Over a medium-hight heat seared the mahi mahi on each side. This shouldn't take long as the fish cooks fast and the pieces are small, roughly 1 minute on either side.
4. Add the mahi, dressing, cucumber, cilantro, lettuce and hot sauce to your wraps/ tortillas and dig in :)
