Mediterranean ORZO SALAD

A fresh lunch pasta salad serves as ideal midday fuel. The dressing only uses 3 ingredients and radiates bright and happy flavors.


I have been sleeping on canned salmon. Tuna has been a staple for aggesss but for some reason I never really use canned salmon. This dish has changed me…I will def be using canned salmon again soon



Ingredients:

250-300g of orzo (dry)

1 can of salmon (500g)

1 large cucumber chopped

1 cup of cherry tomatoes chopped

1/2 cup of black olives

Huge chunk of feta chopped

A huge handful of fresh dill chopped


Dressing:

1 lemon juiced

2 tbsp of olive oil

1 tbsp of red wine vinegar

Method:

Cook and prepare your orzo according to package instructions. Once cooked allow orzo to cool but running it through cold water (in a pasta strainer) and then add to a large bowl. Mix in your salmon, cucumber, cherry tomatoes, feta, olive and dill to the bowl. Toss your salad with the dressing and dig in :)
