The flavour in this spring bowl is phenomenal and what a perfect option for a healthy lunch throughout the busy work week. Meal prep doesn’t have to be hard to be delicious. This flavoursome salad if such an awesome example. Inspired by the most beautiful pumpkin plucked straight from my grandparents garden. A classic meal prepped lunch for me include some form of grain, a protein source, mixed greens and a dressing / herbs to tie everything together.
Details:
- Aldi Moroccan couscous packet, you can use regular couscous and add additional dried herbs + sun-dried tomatoes to achieve the same flavour
- pumpkin & mushrooms roasted in oil olive and seasoned with fresh garlic, dried mixed herbs and pepper
- grilled chicken thighs seasoned with lemon and pepper
- a handful of freshly chopped mint
- the juice of 1 whole large lemon
- later added: more sundried tomatoes and sprouts
