PARSLEY CHICKEN MEATBALLS PASTA BOWL

I used this recipe as a meal prep and I can say I was in heaven all week :) This protein source is so simply to make and tastes phenomenal! Plus the meatballs only take 15mins to make and 15mins to bake and you're done.


I served up my meatballs with a fresh orzo pasta salad and a elegant lemon hummus dressing.



CHICKEN MEATBALLS:

- 1 lb of lean chicken mince

- 1/2 a medium onion finely diced

- 1/2 c of finely chopped fresh parsley

- 2 cloves of minced garlic

- 1 tsp of cumin

- 1 tsp of oregano,

- 1 tsp of chili powder


Preheat your oven to 450F, mix all the ingredients together in a bowl besides the mince. Then add the mince and mix until everything is thoroughly combine. Scoop tablespoon portions, roll into balls and place on a lined baking tray. Bake the chicken meatballs for 15minutes.


PASTA SALAD:

- 1 cup of orzo

- 1 cucumber

- 1 cup of sliced cherry tomatoes

- freshly chopped parsley

- 3 tbsp of red wine vinegar

- juice of 1 large lemon

- 1 tbsp of dried oregano

- 3 tbsp of hummus

- freshly cracked pepper


Cook orzo according to package instructions, and allow to cool. Whilst your orzo is cooling chop and prepare your cucumber, tomato and parsley. In a jar add your red wine vinegar, lemon juice, oregano, pepper and hummus and then shake. You can then add a splash of water to the dressing if you'd like to thin it a little.


Serve up your orzo pasta salad and chicken meatballs with some extra hummus and parley and then devour :)
