rich SUN-DRIED TOMATO GNOCCHI

This dish screams comfort and can be whipped up in less than 15 mins. Perfectly sauce and tastes like something you could get in a restaurant.


Fresh tomatoes, and rich sun-dried tomatoes partnered with fluffy gnocchi pillows will become your new Friday night cozy dinner.

You’ll need (recipe for 1):

125g of gnocchi

1 tbsp of olive oil

100g-120g of chicken thigh

2 tbsp of sun-dried tomatoes

2 tbsp of rich tomato paste

1/2 chicken cub stock

1 cup of fresh cherry tomatoes

1 cup of chopped mushrooms

1 tsp of dried basil

1 heaped tbsp of cream cheese

1 cup of spinach


Method:

  1. Add 1 tbsp of olive oil to a medium medium/ hot pan. Once the pan is hot, add peppered chicken and cook until cooked through

  2. Remove chicken from pan and add the tomato paste, sun-dried tomato, chicken stock cube, and 1/2 cup of water.

  3. Cook sauce for 1 min and then add the cherry tomatoes, mushrooms and 1 tsp of dried basil. Sautee for ~5-10 minutes until soft

  4. Whilst veg is sautéing cook your gnocchi. You can do this in boiling water or in your airfryer for ~6mins at 200C

  5. Add 1/4 cup of water to the veg and along with the cream cheese. Stir and allow the veg to slowly simmer until the cream cheese had mixed in.

  6. Add your spinach to the pan and allow to wilt

  7. Add the chicken and gnocchi to the pan, mix and serve up :)
