SATAY CHICKEN

this dinner is so very nostalgic for me. Satay dish used to be a classic for my fam when we were growing up in Aus. The dish uses a creamy, peanut butter based sauce which is simple to die for :) Speedy quick and never fails....a classic


Ingredients

SAUCE (2-3 servings) :

- 2 tbsp peanut butter

- 1 tbsp soy sauce

- 1 tsp maple syrup

- 1/2 tsp curry powder

- 2/3 cup of coconut milk

- juice of 1/2 a lemon


- splash of olive oil

- 1/2 a onion finely chopped

- 1 large garlic clove minced

- 1 cup of sliced white mushrooms

- 1 small eggplant roughly chopped

- 300 grams diced chicken



Method:

  1. Start by mixing all the sauce ingredients together and then set aside

  2. In a medium-large pan add a good splash of olive oil and cook the garlic and onion for a few minutes until fragrant

  3. Add the mushrooms and eggplant and sauté for roughly 10 mins

  4. Add the chicken and grill until cooked

  5. Then add the sauce to the pan and bring to a slow simmer. Allow to cook until all the veg is soft and flavourful

  6. Serve with some rice and additional steam veg (optional)
