SPICY ORANGE SHRIMP BOWL

With winter coming oranges are in their prime :) This bowl will add the perfect amount of pizzazz to your palette. The flavors in this meal seriously taste just as vibrant as they look. Trust me, your taste buds are going to be twirling.

This recipe makes roughly 2 portions and can be adjusted to fit you!

Marinade/ Sauce:

1/3 cup of fresh orange juice

2 tbsp sriracha

1 tbsp soy sauce

2 tbsp EVOO

1/2 tsp of chili powder

Bowl components: 12 jumbo shrimp

an orange

a cucumber

1/2 a lemon

2 green onions

Cooked white rice (I use roughly 3/4 of a cup cooked)

freshly sliced avo

Method:

  1. mix together the above marinade ingredients in a glass or small bowl

  2. Pour 1/2 the marinade over the shrimp, stir and set aside. Allow to sit for around 20 minutes

  3. In the mean time dice up your orange, cucumber and finely slice your green onions. Combine in a bowl and squeeze the juice of 1/2 a lemon over the mixture

  4. Heat up a pan/skillet on high heat and add some olive oil. Add the shrimp and cook on both sides for 2-3 minutes each until charred.

  5. Serve up the rice, shrimp, citrus mix and avocado in a bowl. Pour the extra marinade over the top of the bowls and serve up

ENJOY :)
