What a brilliant way to change up your normal sushi rolls. But don't get me wrong a good sushi roll will forever hold a precious place in my heart. Hear me out though...you can fit double as many fillings in these! I know right bloody incredible.
These babies can make for a perfect lunch on the go. There are also an endless amount of filling options and sauces you can chose so get creative :)
If you would like a radiantly colorful sushi sandwich like this here's what I used:
VEGGIES: cucumber, carrots, radish, spinach, peppers
PROTEIN: cooked salmon and ahi tuna
GARNISHES: spring onions, jalapeños
SAUCE: 3 tbsp tahini, 1 tbsp sriracha, 2 tbsp lemon juice, 2 tbsp water
METHOD
Prepare your sushi rice (using short grained rice and rice wine vinegar), your desired vegetable and protein
Place a layer of cling wrap down on the bench and then place a piece of sushi paper on top in a diamond orientation
Add the rice to the sushi paper in a square shape (image 1).
Top your rice square with your choice of veggies, protein and sauce, then add another layer of rice the same exact size as the initial layer (image 2).
Fold all four corners into the center of the rice square (image 3).
Wrap the sushi square in your cling wrap tightly to hold everything together (image 4).
Then cut in half and dig in!
