Ingredients :
Round Rice paper
Brown rice
Cucumbers
Carrot sticks
Spring mix greens
Cilantro
Tandoor chicken
SAUCE:
1/2 cup of Greek yogurt
1 tbsp of tandoori paste
3 tbsp of creamy almond butter
Start but making your sauce but whisking all your ingredients together and set aside.
Make sure all your veg, chicken and rice is prepped and ready to roll
fill a large bowl with warm water (not boiling) and place one of the rice paper rolls in the water until soft
Remove the rice paper from the water and add your ingredients in a rectangular type shape directly in the middle of the wrap. I usually add the rice first, then the chicken & veg, and spring mix last
Fold in the two shorter ends first, then start from one of the longer edges and roll to cover the filling. Keep rolling, making sure all the filling is tightly enclosed and the rice paper will stick to seal itself
