THAI GREEN CURRY with chicken meatballs

If you’re a fan of Thai curries but want to try something a little different. Give this simple dish a go! Took me very little time to prepare and I was blown away but how creamy and tasty the meal was. I even cooked my meatballs in my air fryer which meant less dirty dishes :)



Ingredients (for 2)

MEATBALLS

300g chicken mince

3 tbsp of green onions finely chopped

2 tsp of green thai paste

1 tsp of grated ginger

1 tsp of grated garlic

1 tbsp of fresh chili (adjust as needed)

SAUCE

1 tsp of olive oil

2 tsp of grated garlic

2 tsp of grated ginger

2 tsp of finely chopped chili

2 cups of coconut milk (full fat)

2 tbsp of green thai curry paste

2 tsp of fish sauce


Method:

  1. Prepare your meatballs: mix all the ingredients together thoroughly. Then scoop out a tbsp of the mixture and form into a ball. Continue for the remainder of the mince.

  2. Cook meatballs: I cooked my meatballs in my air fryer at 160C for 12 mins :) Alternatively you can pan fry them in a little olive oil on medium heat until cooked all the way through

  3. Prepare your sauce: Add olive oil to a medium hot large pot. Once the oil is hot add the garlic, ginger and chili and simmer for 1 minute until nice and fragrant. Add the green thai paste, fish sauce and coconut milk. Bring the pot to a lower simmer for roughly 8 mins

  4. Service up the meatballs with your choice of stir-fryed veg, noodles and additional garnishes (coriander, green onions, chili)
