THAI MEATBALL grain bowl

this meal has easy become a work lunch staple. Packed with flavor, nutrients, color, and most importantly keeps me satisfied for the rest of the afternoon.


Thai Meatballs: 500g of chicken mince

1 tsp of crushed chili

1 tsp of minced ginger

3 tsp of green thai curry paste

1/4 cup of chopped cilantro / coriander


Other components:

mixed greens

chopped cucumber

cherry tomatoes

cooked quinoa

cilantro / coriander

Dressing: green yogurt, green thai curry paste & lemon juice to thin


Method:

  1. Prep the meatballs: Mix the chicken mince with the thai paste, chili paste and ginger. Roll into tbsp sized meatballs. Bake in an airfrier at 180C for 8 mins

  2. Prepare your bowl: Make a base of greens and quinoa, top with meatballs, tomatoes and cucumber. Add some cilantro on top and apply a generous amount of the dressing to your bowl
