I was in the need of a quick dinner which could be whipped up on a week night and came up with this stunner. Can’t stop, won’t stop cooking with rice noodles hehe
basic ingredients, but brillant flavour
Ingredients:
- 2 tbsp of olive oil
- 500g beef chopped into stirfry strips
- 1 green capsicum cut into strips
- 1 large carrot chopped into fine strips
- 1 medium onion sliced into fine strips
- Cooked rice noodles
SAUCE:
- 1 tbsp of freshly minced ginger (I use a zester for this)
- 3 garlic cloves minced
- 1/4 cup of soy sauce
- 1/3 cup of rice vine vinegar
- 1 tbsp of chilli paste (optional)
- 2 tbsp of tapioca flour/ corn flour
Method:
Prepare all your vegetables
Prepare your sauce: Mixed together fresh ginger, garlic, soy sauce, rice wine vinegar, chili paste, flour
In a large pan add 1 tbsp of olive oil, allow to warm and then add your beef. Cook the beef on all sides and it is cooked all the way through. Place beef in a bowl to the side.
Add another tbsp of olive oil, the capsicum, carrot and onion in the pan and allow to sauté to your liking.
Add the beef back to the pan with the sauce. Mix all together and allow to cook for at least 2 minutes to allow the sauce to thicken
Serve up with rice/ rice noodles and a fried egg
