They say you should each the rainbow right? Well I think this dish does an immaculate job of just that! Eating a diversity of color means you are getting an essential range of minerals, antioxidants and vitamins in your diet. In other words a large range of veggies and fruits in your diet helps your body stay happy, healthy and fight off any nasties
INGREDIENTS:
Chips
- 2 large sweet potatoes
- Olive oil
- Spices: paprika, chili powder, cumin and pepper
Tofu Mince
- 1 medium onion, finely diced
- 2 large cloves of minced garlic
- 1 tbsp of olive oil
- 1 tbsp of cumin
- 1 tbsp of chili powder
- 1 tsp of paprika
- 1/2 tsp of oregano
- 1 tbsp of sriracha
- Tomato paste (6 ounces)
- 1/2 cup of water
- 1x 16ounce block of firm tofu
Other Toppings
- avocado
- cilantro
- fresh jalapeño
- pickled red onion
- lime juice
- hot sauce
METHOD
1. Preheat your oven to 400F and line baking trays with parchment paper
2. Peel and chop your sweet potatoes into circle chips
3. Cover the chips in a layer of olive oil and cover in a combo of paprika, chili powder, cumin and pepper
4. Place the sweet potato chips in the oven and bake until soft/ crunchy to your liking
5. Whilst the potatoes are cooking making your tofu mince. Start by sautéing the onion and garlic in olive oil until translucent.
6. Add the listed spices and cook for 30 seconds until translucent
7. Add the can of tomato paste and stir through
All to cook until fragrant and then add tomato paste and water, mix until combine
8. Crumble up the block of tofu and add to the pot, cook for at least 15 minutes to all the tofu to cook and soak up the flavor
9. Serve up your sweet potato nachos, tofu mince and your favorite toppings
