Forget Taco Tuesday, these tacos are so good they can be eaten everyday of the week. Packed with flavor, the tacos are both zesty and creamy.
This recipe serves for roughly 4 people
Ingredients:
SHRIMP
- 16 ounces of shrimp (medium)
- 1 tsp of cumin
- 1 tsp of chili powder
- 1 tsp of paprika
- 1 tbsp of olive oil
- juice from 1/2 a medium lime
CILANTRO SAUCE
- 2/3 cup of greek yogurt
- 2 tbsp of olive oil
- 1 clove of minced garlic
- 1/2 a finely diced jalapeño
- 1/2 cup of roughly chopped cilantro leaves
TACOS
- baby flour tortillas x8
- 1 packet of shredded cabbage (roughly 3 cups worth)
- cucumber
- pickled red onions
- fresh cilantro leaves
- fresh jalapeño
- limes
Method
make sure all the shrimp are de- shelled and clean. Place them in a bowl and evenly coat in the lime juice, chili powder, cumin, paprika and olive oil. Set the bowl aside and allow the shrimp to marinate as you prepare the other ingredients
Make the sauce by combining the greek yogurt, olive oil, garlic, finely cut jalapeño, and cilantro in a bowl.
Pour 2/3 of the sauce over the coleslaw mix and mix until evenly coated
Prepare the rest of your choice of garnishes and set aside
Drizzle some olive oil in a large pan over medium heat and sauté for 1-2 minutes on each side until pink and cooked through
Assemble the tacos by filling them with the coleslaw mix, shrimp, sauce and other garnishes
