my new diet whilst I get rid of my intestinal methanogen overgrowth (IMO) excludes all gluten & grains besides white rice and quinoa. The last 2 weekends honestly haven’t been too bad so far but I could def go for a bowl of pasta haha
ingredients:
1/2 a banana smushed
1 egg whisked
3 tbsp of coconut flour
2 tbsp of almond milk
toppings:
1/4 of greek yogurt
1 tbsp of mocha protein powder
shredded coconut
1. Smush your nana with a fork really well. Add the whisked egg, almond milk and coconut flour. If batter is too thick you can add another splash of almond milk.
2. On a nonstick pan at medium heat cook the pancakes, allow them to cook on eat side for ~3 minutes
3. Top with your fav toppings. I used a greek yogurt & protein powder mixture + additional coconut
