Berrylicious BREAKFAST QUINOA

This gorgeous bowl was inspired by a warm comforting bowl of oatmeal. On my current diet protocol I am not allowed allowed oats and I have def missed them.


But these warm bowls of quinoa oats have really been growing on me. Quinoa is high in fiber and is packed with micros like magnesium, potassium, iron and folate. It also doesn’t contain any gluten :)


Ingredients:

1/4 cup of quinoa

1/2 cup of water/ nut milk

1/2 tsp of cinnamon

1/4 tsp of nutmeg

2/3 cup of berries

Protein powder - mocha

TOPPINGS: greek yogurt, strawberry, walnut, cinnamon, coconut


Method

1. In a small saucepan add the quinoa water, cinnamon & nutmeg bring to a light-medium simmer. After 10 minutes add the berries and continue to cook until the quinoa is cooked (you may need more liquid)

2. Remove from heat and stir in protein powder (optional)

3. Add your fav toppings: greek yogurt for extra creaminess, extra berries, walnuts, coconut & cinnamon
