An easy peasy weekend bake! Think of a cozy apple cinnamon pie…but make it cake. I’m a huge fan of tasty chunky snacking loafs. This recipe tasted so good I just had to make it twice in one week.
Ingredients:
2 pink lady apples
1/3 cup of cooled melted butter (I used plant based)
2 lightly beaten eggs
1/3 cup of sugar
1 tsp of vanilla
1/4 cup of milk (almond)
2 tsp of cinnamon
1 1/2 cup of flour
1 tsp of baking soda
Method:
Preheat oven to 180C / 350F & line a loaf tray with baking paper
Set aside 1/d an apple for decoration and chop the remaining into chunks, set aside
Mix together melted butter, and sugar
Add the eggs and vanilla, stir
Add the flour, cinnamon, and baking soda to the bowl, stir until just combined
Fold in apple chunks, and pour the batter into the lined tray
Decorate with remaining apple, a touch of cinnamon and a sprinkle of sugar
Bake for 45-50 mins
