APPLE PIE Snacking Loaf

not much beats a soft, fluffy, moist apple loaf paired with a warm cuppa at morning tea. This is recipe I have had on repeat for months! It is seriously that good :)


2 apples - they’re my fav

big drizzle of coconut oil / coconut oil

cinnamon


1 cup of flour - I used gf

1/2 cup of oat flour

1 tsp of baking soda

cinnamon measured with your heart

1 large smashed banana

1/4 cup of maple syrup/ honey

1/4 cup of greek yogurt

1/4 cup of coconut oil

2 eggs


Method:

  1. In a pan on medium heat sautée 1 & 1/2 diced apples in olive oil and cinnamon. Save the other 1/2 to top your loaf

  2. Preheat over to 180C and line a loaf tray

  3. Add banana, coconut oil, honey, greek yogurt and eggs in a bowl. Then whisk together

  4. Add the oat flour, flour, baking soda and cinnamon to the bowl and stir into wet ingredient

  5. Fold in the sautéed apples

  6. Pour batter into loaf pan, add additional apple on top and bake for 40-50 mins


Highly recommend serving with some of your fav yogurt, and with a cup of tea.
