next time you have just one over ripe nana try making these delights. As you all know I adore cacao and these fudge bites are the perfect chocolatey truffles to enjoy right after my lunch. I’m guilty of pretty much always needing something sweet after dinner or lunch
I know you guys are going to ADORE these
1 small ripe nana
1/4 cup of almond butter
1/3 cup of protein powder*
1/4 cup of cocoa powder
1/2 cup of oat flour - just blended oats
1 cup of mixed nuts
*I used whey salted caramel. If you use vegan protein you most likely won’t need as much oat flour
1. Smash your banana with a fork and mix in the almond butter
2. Add the cacao powder, protein powder and oat flour. Mix until well combine
3. Chop your nuts up and mix into the batter
4. Roll the batter into balls and store in the fridge or freezer.
TIPS: If the mixture is too sticky add additional oat flour. Storing the batter in the fridge for an hour before rolling will also help the batter solidify a little. If you slightly wet your hands this will also help with rolling.
