When banana bread and coffee cake meet in the middle....
This snacking cake is the perfect healthified sweet treat to have by your side throughout the week :) If you’re a fan of cinnamon this is a must try!
Ingredients:
Coffee Cake
1 cup of smashed banana
2 eggs
1/4 cup of sugar
1 tsp of vanilla
1 cup of oat flour
3/4 cup of almond flour
2 tsp of cinnamon
3 tsp of baking powder
Crumble:
2/3 cup of rolled oats
2 tbsp of maple syrup
2 tbsp of melted coconut oil
2 tbsp of oat flour
1 tsp of cinnamon
Method:
Preheat the oven to 350F / 180C and line an 8x8 inch / 20x20 cm baking pan with baking paper
Prepare your crumble topping by mixing all the ingredients together in a small bowl and set aside.
In a large bowl whisk together the banana, eggs, sugar and vanilla together
Add the oat flour, almond flour, cinnamon, and baking powder to the small bowl and thorough mix until all ingredients are combine
Pour the batter into the lined tray and then evenly top with the crumble
Bake for 20-30 minutes, to check if it is ready poke with a knife and ensure it comes out clean
