berry BLENDER CREPES

Need a change up from your weekend pancakes or oatmeal. These oat based blender pancakes will change the way you breakfast.


They were such a hit for a family Sunday morning. I simply can't believe they are only 4 ingredients.


Ingredients

1 cup of oats

1 cup of almond milk

2 tbsp of maple syrup

2 eggs


Toppings

Greek yogurt

Frozen berries melted in the microwave



Method

1. Bend the oats until flour forms

2. Add the remaining ingredients to the blender and blend until mixed threw

3. Lightly oil a skillet with coconut oil and heat to medium-high

4. Add roughly 3 tbsp of the mixture to the pan and immediately tilt and rotate the pan to spread the batter thinly

5. Cook for roughly 30seconds and then with a spatula flip the crepe and cook on the other side for 20ish seconds

6. Repeat for the rest of the batter and then load up with your favorite toppings
