Pretty pretty please make these a regular part of your daily snacking regime. My fam, particularly my parent cannot get enough. We never get sick of them because there are just so many variations to try.
INGREDIENTS:
- 3/4 of a cup of dates, dried figs or prunes will also work as a sub.
- 1/4 cup of nut butter
- 1 cup of your choice of nuts. I like to use pecans and walnuts but you can also opt for almonds, macadamias, peanuts, cashews, pistachios, hazelnuts...
- 1/2 cup of oat flour, simple blend up some regular oats as fine as possible
- 1/4 c of dried coconut flakes
- 2 tbsp of hemp seeds
- 2 tbsp of ground flaxseed
Additional add-ins: coco powder, chia seeds
METHOD:
Place dates in a mug and add enough boiling water to cover them and allow to soak for at least 15 mins. This allows the dates to get soft
Add ONLY the soaked dates and nut butter to a food processor to form a creamy paste. DO NOT include the extra water the dates were soaked in. You should be also able to use a high speed blender.
Add the remainder of the ingredients to the food processor and blend until all the ingredients are combined. Depending on your preference you can blend the mixture until the nuts are left chunky or nice and smooth. If the mixture is too dry add small amounts of the date soaking water until the mixture becomes dough like.
Finally roll the mixture into balls and store in the fridge.
