CHUNKY DUNK COOKIES

These chunky cookies will win the whole family over. Dates, walnuts and chocolate, does it get much better than that? Perfect as a sweet treat, with a cup of tea or even for brekky.


Ingredients (15 cookies):

1 cup of oats, quick*

1/2 a cup of flour

1/2 a tsp of baking soda

1/3 cup of tahini*

1/4 cup of honey/ maple syrup

2 tbsp of almond milk

1/2 cup of walnuts

1/2 cup of dates

1/2 block of dark chocolate

*Regular steel cut oats will also work as an alternative

Method:

  1. Preheat the oven to 180C/ 350F and line 2 baking trays

  2. In a bowl combine the oats, flour, baking soda

  3. Stir in the honey, tahini and almond milk until a thick batter forms

  4. Chop up your dates, walnuts and chocolate into chunks and stir into the batter

  5. Roll into 2 tbsp balls and place on the lined tray, then squish them down

  6. Bake for 12 mins or until golden on the edges

  7. Allow to cool and enjoy :)
