CITRUS BANANA BREAD

This orange flavored banana bread takes advantage of the immaculate oranges available during citrus season. The loaf is perfectly fluffy with a tang of citrus making for an awesome comfort snack or brekky.


Also you guys this recipe can be made using one bowl, which means less time making the batter, less time cleaning up and you get to dig into the immaculate loaf sooner.


Ingredients

  • 1 cup worth of smushed banana, roughly 1 cups worth

  • 1 large orange, zested and squeezed (1/2 c of fresh OJ)

  • 1 tsp of vanilla

  • 2 eggs, or 1 egg + 2 egg whites

  • 2 tbsp of melted coconut oil

  • 3/4 cup of oat flour

  • 3/4 cup of all purpose flour

  • 1/3 cup of sugar (optional)

  • 1 tsp of cinnamon

  • 1 tsp of baking powder


Method

  1. Preheat your oven to 325F and line a loaf tin with parchment paper

  2. mash up your banana and place in a medium bowl

  3. Add the orange zest, juice, eggs, vanilla, coconut oil to the banana and mix until combined

  4. Add the oat and all purpose flour into the bowl evenly and then top with the sugar, cinnamon and baking powder. Carefully mix the baking powder into the flour on top of the wet ingredients

  5. Mix the ingredients all together thoroughly and then pour the batter into the loaf pan.

  6. Bake for roughly 50 minutes at 325F, allow to cool and then DIG IN
