COCONUT & ZUCCHINI BAKED OATS

coconut make any dish taste like dessert. There is just something so decadent about it.


I made these oats last week for work morning tea and I had to make the exact same recipe this week cause they were that good!



Ingredients:

1 cup rolled oats

1 cup quick oats

2 scoops of protein powder (80g)

2 medium smushed bananas

2 medium zucchinis grated

2 tbsp of melted coconut oil

1 tsp of vanilla

1 cup of coconut milk

1/4 cup of shredded coconut



Method:

Preheat your oven to 180C

Mix all the above ingredient in a medium bowl

Pour oats into a lined dish

Top with desiccated / shredded coconut

Bake for 30-40 minutes. (I baked mine in a glass pyrex so it took 40ish mins)

Cut up into 4 portions for the week and enjoy Xx
