DATE TRUFFLES

my new FAV post lunch sweet. doesn’t get much better than a gooey caramel covered in chocolate.


only 5 ingredients and simply magical. Make a double batch and store them in your freezer to grab whenever the sweet tooth hits (every day for this girl)


Ingredients:

1/3 cup of dates (soaked if needed)

3 tbsp of peanut butter (any nut butter will work)

1/2 cup of almond flour

1/4 cup of quick oats

meted dark chocolate to top


Method:

1. blend you dates & pb until a paste forms

2. stir the oat flour and almond flour into the paste to make a dough

3. spread between 12 portions of a silicon tray and place in the freezer to harden

4. in the mean time melt your chocolate

5. drizzle the chocolate on top of each date truffle and store in the freezer :)


If you don’t have a silicon mould you can easily used a lined cupcake tray
