Next time you have a ripe banana and give these cookies a go. So simple you can make a batch in under 30 minutes on a week night ✨gasp✨
Soft, fluffy & caramelly
1 large ripe banana (~120g)
1/3 of almond butter or other nut butter
2 tbsp of honey / maple syrup
1/2 cup of coconut flour
1 tsp of baking powder
1/2 tsp of cinnamon
1 tsp almond butter
1/2 tsp of coconut oil
1 tsp of cocoa powder
1. Preheat oven to 180C and line a tray with baking paper
2. In a medium bowl smash your banana with a fork, mix in the almond butter and honey
3. Stir in the coconut flour, baking powder and cinnamon
4. Scoop a tablespoon portion of the mixture, form into a ball and flatten on baking tray. Batter should make ~10 smaller cookies
5. Bake for 10-12 mins until golden on the edges
6. Optional: once the cookies have cooled you can add a chocolate drizzle. This one was made by melting together almond butter & coconut oil in the microwave and stirring through the cocoa.
