Creamy, yet light and refreshing. Absolutely perfect for a health alternative to cheesecake. Seriously such an awesome healthy dessert the whole family will love on a hot summers day.
INGREDIENTS:
Base
1/4 cup olive oil
2 tbsp lemon juice
1/2 cup almond flour (can sub for regular/ coconut flour)
3/4 cup of quick oats
2 tbsp of sugar/ sweetener
Top layer
2 eggs
2 cups of greek yogurt
1/4 cup of lemon juice
2 tbsp of lemon zest
a dash of lemon extract (optional)
a small splash of yellow food coloring (optional)
1 tsp of arrow powder / corn starch
2 tbsp of powder stevia/ sugar
METHOD:
Preheat the oven to 350F/ 180C and line a 8x8inch tray
Mix together all the 'Base' Ingredients in a medium bowl and then press into the lines tray. Bake for 15 mins and then allow to cool on the bench for 20 mins
Whist the base is cooling prepare the top lemon layer by mixing the 'top layer' ingredients together
Pour the top layer evenly over the cooled base. Bake for 40 mins at 325F/ 160 C
Allow to cool on the bench for 1 hour, then move to the fridge and cool for another 2 hours before cutting and serving.
