high protein CARROT CAKE BAKED OATS

my goooddnessss! This recipe = elite. And you will never guess what the creamy icing is made of 🙊


This recipe is high in protein, and dairy free!


2.5 cups of quick oats

3 tbsp of maple syrup

2 tbsp of chia seeds

2 tsp of baking powder

2.5 cups of soy/oat/nut milk

2 small carrots grated

2 tsp of cinnamon


Icing

250 g silken soy

1 large scoop of caramel protein powder ~50g



Method

1. Preheat your oven to 190C/375F and line a 20cmx20cm (8x8inch) dish

2. Mix all your oats and baking powder together in a large bowl

3. Add the remaining ingredients to the bowl and stir well. Allow the oat mixture to soak for at least 15 mins before baking

4. Bake for ~40 mins in the oven

5. Prepare your icing by blending the silken soy until it is smooth. Add the protein powder and blend until smooth.

6. Once the oats have cooled spread the icing evenly oven the oats.
