HONEY & WALNUT BANANA BREAD

a comforting classic that pairs perfect with your morning cuppa :)


it’s been rainy here in brissy the last few mornings and enjoying my tea with a slice of toasted banana bread has been IDEAL. a rich honey brings the most golden flavour. Serving the banana bread warm with some greek yogurt and extra honey is moreish.


Ingredients:

2 large / 3 small mushed banana

2 eggs

1/3 cup of honey

1/3 cup of melted coconut oil

1 tsp vanilla

1-2 tsp cinnamon

1/2 tsp himalayan salt

1 & 1/2 cups of self raising flour

1/2 cup of almond meal

1/2 tsp baking power


Method:

1. In a large bowl whisk your eggs. Mix in the nana, honey, oil, vanilla, cinnamon and salt

2. Fold in the dry ingredients : flour, almond meal, baking powder

3. Add the batter to a lined load tray and cover the top in walnuts

4. Bake at 180C / 350F for 35-45 minutes
