LAMINGTON PROTEIN BLISS BALLS





Im in awe by how good these hunnies turned out to be. I think I nailed the lamington flavors in a cute bite size. Lamingtons remind me of home, and Im always so happy and astonished to meet someone from outside of Australia who appreciates them as much as I do.


I adore having these nutrient dense protein balls on hand to fuel me through the week. The lamington bliss-balls are made from naturally healthy ingredients and are terrifically tasty.






Ingredients

- 2/3 cup of nuts of choice ( I used almonds and walnuts)

- 1/3 cup of plain or vanilla protein powder

- 1/3 cup of shredded coconut (plus more to roll in)

- 1 tsp of vanilla

- 1/4 cup of maple syrup/ agave

- 3 tsp of water

- 1/2 - 1 cup of raspberries

- 1/4 cup of dark chocolate chips

- 1/4 cup of almond milk

- 1 tbsp of cocoa powder




Method:

  1. In a food processor combine the nuts, protein powder, coconut, vanilla, and syrup. Plus until a dough forms. If the mixture is not sticky enough add a tsp of water at a time to reached the right consistency

  2. Once the dough has formed, grab a tbsp size scoop of the mixture, roll into a ball and then flatten. In the center of the dough place a raspberry and then cover up the edges of the raspberry with the dough and roll back into a ball shape

  3. After all the balls are formed, melt your chocolate in 10 sec increments in the microwave. Once melted add the almond milk and cocoa and stir until a ganache forms.

  4. Roll the balls in the ganache and then in a layer of fine desiccated coconut

  5. Dig in and ENJOY :)
