A healthy sweet treat calling your name! Perfect for a hot summers day :)
Seriously these were beyond blissful! You must give them a whirl
BASE 1/2 cup of almond flour
1/4 cup of plain flour
2 tbsp of maple syrup
2 tbsp of coconut oil
1 tsp of vanilla
FILLING
2 eggs
1/3 cup of fresh lemon juice
2 tbsp of maple syrup
2 tbsp of sugar/ sweetener
1 tbsp tapioca starch
METHOD:
1. Preheat your oven to 180C and line a loaf tray with baking paper
2. Combine base ingredients for form a dough and press into your lined tray. Bake for 10 mins
3. While youre waiting prepare the filling by whisking together the filling ingredients
4. Once base is done add the filling right away and bake for an additional 15 mins at 160C
5. Allow bars to cool and then allow them to refrigerate for ~3 hours before slicing and eating (I did this overnight)
