LEMON RASPBERRY LOAF

Im obviously ready for summer because these flavors scream warm weather. Ive been on a huge raspberry kick lately and you guys know I cant get enough of lemon baked goodies. She's a beaut to keep as a healthier baked good snack throughout a busy productive week :)



Ingredients:

  • 1 cup of greek yogurt

  • 1/3 cup of maple syrup

  • 1/3 cup of coconut oil

  • 2 eggs

  • Juice and zest of 1 big lemon

  • 1 tsp of vanilla

  • 1 cup of all purpose flour

  • 3/4 cup of oat flour

  • 1/2 tsp of baking powder, 1/2 tsp of baking soda

  • 1 cup of frozen raspberries + more to top




Method:

  1. Preheat your oven to 350F and line a bread tray

  2. Thoroughly combine the greek yogurt, maple syrup, melted coconut oil, vanilla, eggs, lemon zest and juice in a medium bowl

  3. Place the all-purpose and oat flour on top of the wet ingredients and then place the baking powder and baking soda on-top of the flour/ Careful mix the baking powder and soda into the flour

  4. Mix all ingredients in the bowl together and ensure there are no flour lumps

  5. Then mix in your raspberry and pour the batter into the tray. Add additional raspberries on top if you would like

  6. Bake for 45-55 minutes in your oven
