STRAWBERRY OAT COOKIES

Oh. Em. Geee. These turned out so my better than I was planning…legit ate 5 fresh out of the oven. I can thank the rich tasty strawberries I got from the farmers market and my delish grandads homemade honey. They are just full of so much goodness.


Ingredients (20-24 cookies):

2 cups of quick oats

1/2 cup of plain flour

1 tsp of baking soda

1 lightly beaten egg

1/3 cup of coconut oil melted

1/3 cup of honey/ maple syrup

2 tbsp of almond milk

1 tsp of vanilla

1 cup of chopped fresh strawberries

1/2 cup of chopped walnuts











Method:

Set your oven to 350F/180C and line 2 trays

Add oats, flour, and baking soda into a bowl and mix

Add in your coconut oil, honey, almond milk and vanilla and stir until well combine

Stir in the strawberries and walnuts

Scoop 2tbsp portions of the batter, shape and add the the baking trays

Bake for 10-15 mins or until golden on the edges

Allow to cool for at least 30 mins before devouring
