SWEET POTATO BROWNIE BITES



Okay okay I know what you're thinking a bloody potato in brownies would taste awful. But if I gave you one of these hunnies to compare to a regular brownie you wouldn't even be able to tell which is which. So fudgey, so delicious.


My huge chocolate craving was cured after these babies. The entire batch disappear in one afternoon in my house.


Simple ingredients and simply blissful. If you'd like you can also cook this batter as a regular brownie slice.





INGREDIENTS


200g sweet potato puree

3 tbsp almond butter

1/3 c of sugar/ sugar sub

1/3 c cocoa powder

1/3 c of flour of choice, I used cassava

1 tsp vanilla

1/2 tsp baking soda

3 tbsp of almond milk

Chocolate chips / chunks






METHOD

1. Start by making the sweet potato puree. The easiest way to do so is by using the microwave. Using a fork poke a few holes on each side of the sweet potato/s and place in the microwave for roughly 5 mins (this depends on the size of your potato). Then scrape the sweet potato flesh apart from the skin and mash with a fork.

2. Next you can either add all the ingredients to a blender/ food processor and combine until smooth. Or you can simply mix/mash all the ingredients together until they are thoroughly combined.

3. Then mix in as much of your chocolate of choice.

4. Lastly separate the mixture into 9 spots of a muffin tray and bake for roughly 20mins at 350F.
