ZUCCHINI & CORN FRITTERS

nom nom nom. These make for the perf snack / dinner side. I could eat the whole batch in one sitting. Paired with tzatziki, hummus or another tasty dip and they are scrumptious 🤌🏻


simple & satisfying



Ingredients:

3 cups of grated zucchini

1 cup of corn

1/2 cup of diced red onion

a handful of fresh parsley finely chopped

2 eggs

1/2 cup of plain flour

1/2 cup of bread crumbs (1 piece of toast blitzed)

1 tsp of cracked black pepper


Method:

1. Preheat your oven to 210C / 410F

2. Prep all your veg, squeeze 1/2 the juice out of the zucchini

3. Prep bread crumbs by toasting 1 piece of bread and blitzing until fine

4. Lightly whisk eggs

5. Combine all ingredients in a medium bowl and thoroughly mix

6. Scoop 2 tbsp of the mixture, form a ball and then flatten. Place on a lined baking tray and repeat for the remaining of the mixture

7. Bake for 20ish minutes or until golden brown


perf idea for nibbles at your next fam bbq :)
