BAKED TOFU SPRING ROLLS

What an appetizer, holy moly. I could easily eat the entire batch in one sitting. Packed with tofu and golden sautéed veggies.

This recipe includes ingredients for 12 spring rolls


Ingredients

- 1 12ounce block of tofu (pressed)

- 2 tbsp Sweet chili sauce

- 1 tbsp of sriracha

- juice of 1/2 a lime

- 2 tbsp of soy sauce

- 12 sheets of rice paper

- 1 tbsp of olive oil + extra to spray at the end

- 2 cups of chopped mushrooms

- 1 large red bell pepper finely sliced

- 1 medium onion finely sliced

- 3 cloves of minced garlic


Method

  1. Mix together sweet chili, lime, sriracha, and 1 tbsp of soy sauce in a dish suitable for the tofu to marinade in

  2. Cut your tofu into 12 even strips. I sliced the tofu down the middle width ways and then sliced each of the halves into 6. Coat the tofu with the marinade and set aside

  3. In a medium pan add the olive oil, garlic, onion, red pepper, and mushrooms. Sauté the ingredients until soft (20ish minutes). Then add 1 tbsp of soy sauce and cook for an additional 5 minutes. Set aside and allow to cool

  4. Preheat your oven to 400F.

  5. Once the veg has cooled you can begin the wrapping process. Set up your work area with the tofu and veg mixture close by. You will also need a shallow baking dish filled with warm water

  6. Take one sheet of the rice paper and add it to the warm water. Allow the rice paper to soften. You will want to avoid leaving it in the water for too long as the rice paper will become soggy, sticky and very hard to work with.

  7. Lay the rice paper on a cutting board. In the center of the rice paper aadd one piece of the marinated tofu and a heaped spoon of the veg (make sure you try to evenly portion the ingredients for 12).

  8. Wrap the roll up by folding the bottom of the rice paper up and over the filling, folding the top over the filling and then folding one side of the rice paper over the filling. Then roll the spring roll in the direction of the unrolled side until the spring roll closes on itself (I apologize this is confusing, this of a burrito being wrapped up).

  9. Place the spring roll on a lined baking tray and lightly sprits some olive oil over the spring roll.

  10. Repeat the wrapping process for the remaining spring rolls.

  11. Bake the spring rolls at 400F for roughly 30 minutes depending on how crunchy or soft you would like them to be.

  12. Serve them up with your favorite dipping sauce and enjoy :)
