CARAMELIZED ONION & MUSHROOM PASTA

You guys already know that mushrooms are a superior veggie and whats a pasta dish without onions and garlic. This recipe is a heavenly one-pot dinner for a lazy night in. Minimal ingredients, minimal effort and a delish product :)



Ingredients:

1 tsp of olive oil

1/2 a medium white onion sliced thinly

4 ounces of cremini mushrooms

2 cloves of garlic, finely chopped/minced

1 tsp of soy sauce

1/2 cup of veggie broth

1 cup of milk, I used coconut

1 tsp of garlic powder

1 tsp onion powder

1/4 tsp of chili flakes

s&p to your liking

1 tbsp of nutritional yeast (optional)

1 tbsp of cornstarch



Method:

  1. Heat your olive oil in a medium pot, and add onions. Sautée until translucent, 5ish minutes. Add a splash of water if needed.

  2. Add the mushrooms and garlic, sautée for 15 ish minutes

  3. Pour in your veggie broth, milk and spices and bring to a simmer to allow the flavors to build

  4. Add in your cornstarch and cook the sauce on low for 10 minutes to allow it to thicken.

  5. Adjust the flavor to your liking and serve up with some pasta
