CREAMY COCONUT CARROT CAKE

This recipe has my heart so happy. She's a cozy comfort loaf full of awesome fall flavors. If you love coconut and love carrot this recipe is a must try.


Ingredients:

1/2 of oats 3/4 cup of almond milk 1tbsp of flaxseed 1/4 cup of maple syrup 1/4 cup of melted coconut oil 1/4 cup of sugar 1 big splash of vanilla 1 cup of finely shredded coconut 1 cup of all purpose flour 1 tsp of baking power 1 tsp of baking soda 1 tsp of cinnamon 1 tsp of ginger 1 tsp of nutmeg 1/4 cup of walnuts (optional) 1/4 cup of coconut


Method:

Preheat your oven to 350F

Soak your oats in 3/4 cup of almond milk for at least 15 minutes

Mix your flaxseed with 2 tbsp of water to make a flax egg, allow it to sit for 5ish minutes

Combine the oats and flaxseed with maple syrup, coconut oil, sugar and vanilla

Fold in 1 cup of finely shredded carrots Combine all purpose flour, baking powder, baking soda, cinnamon, ginger and nutmeg

Fold dry ingredients into wet

Stir in walnuts and shredded coconut into batter

Place in a lined loaf tray and bake for 1 hour
